Fresh Tomato Salsa (Pico de Gallo)

Here’s a recipe that I have actually made, and it was delicious.  My husband is an avid gardener and every year he puts out this fantastic garden.  Right now, we are neck deep in zucchini, crook neck squash, cucumbers and, of course, tomatoes.  We were trying to think of some way to use the tomatoes, other than basic spaghetti sauce and whatever else you can use fresh tomatoes for.  I’m sure there are tons of recipes out there for them, but being that my husband is picky, he suggested salsa.  So, since I had never made salsa before, even though I know it was easy, I didn’t have down all the ingredients that went with it.  So, I found this recipe and I love it.  One word of caution though, put the tomatoes in last in the food processor – I learned this the hard way, and made it first with the tomatoes at the bottom and they were basically pureed before the onions and other ingredients were sufficiently chopped up.  Grab a bag of chips, or make your own and enjoy!
